These turkey sausage rolls are basically the best parts of Thanksgiving dinner rolled up in flaky puff pastry. They're juicy, savory, and just a little bit sweet from the cranberry sauce. Perfect for using up leftover cranberry sauce! Plus, they're way easier to make than they look, and you can make them ahead to make your life easier.
Roll out defrosted puff pastry to a 12x6-inch rectangle with the long side facing you
Spread the cranberry sauce evenly over pastry, leaving a ½-inch margin along the top and bottom long edges
Form the sausage meat into a 2-inch diameter log and place it lengthwise down the center of the pastry on top of the cranberry sauce *If using store-bought sausage, you'll need to squeeze it out of the casing first!
Fold the pastry up and around the sausage, pinching the seam closed tightly (leave ends open)
Place in freezer for 30-60 minutes until firm enough to slice cleanly
Brush the entire log with beaten egg, then slice into 6 even pieces about 2 inches wide
Place rolls on a parchment-lined baking sheet with space between each piece
Bake at 450°F for 25 minutes until deeply golden brown and internal temperature reaches 175°F
